The heavy metal analysis of mercury (Hg) and chromium (Cr) on frozen escolar Lepidocybium flavobrunneum collected from fisheries management area 573

Abstract

Escolar (Lepidocybium flavobrunneum) is one exported fish products in Indonesia. This research was aim to investigate metal content especially mercury and chromium in escolar fishes which collected from fisheries management area 573. Escolars were group into three categories, which were 4 kg, 8 kg, and 12 kg in weight. Metal analysis was done on their meat (muscle), liver, and gill. The metal measurement was done using atomic absorption spectrophotometry AAS Agilent Technologies 200 AA. Data of metal content were then statistically analyzed using factorial design. The result showed that content of chromium was ranged from 0.04 - 0.08 ppm in gill and 0.09 - 0.66 ppm in meat. However, the content of chromium in the liver is not detected. This content was contrast to the content of mercury, which was variated (0.02-3.87 ppm) among organs and weight group of escolar. It seems that the liver contained higher mercury than other organs of each weight group. Based on the average value, meat of escolar at 8 kg contained the lowest mercury which was 0.68 ppm. This was slightly different to which was 0.63 mg/kg (ppm) for its mercury content. Based on the factorial analysis, it showed that contains of mercury all organs and group were significantly different (p < 0.05). Unfortunately, this finding was above for mercury content in fish generally, which is 0.5 mg/kg.
