Modification of fucoidan from Sargassum filipendula by sulfate enrichment and its antioxidant activity

Abstract

Antioxidant activities of fucoidan in different level of sulfate contents were examined. The sulfate content of fucoidan was enriched by means of sulfonation of fucoidan crude extract from Sargassum filipendula brown-seaweed using sulphur trioxide-pyridine complex reagents. and the antioxidant activities were tested and compared with the commercial fucoidan as a standard using DPPH method. The result of sulfonation was found that it could increase the sulfate content by 3 %. The antioxidant activity of sulfonation product showed a higher antioxidant activity than crude fucoidan.
