Abstract

In the rice processing chain, drying is an important step to be done after harvesting. In this paper, small-scale electrohydrodynamic drying (EHD) device was developed and analyzed. The EHD device is based on high voltage AC and multineedle-To-plate electrode configuration. The analysis of EHD device consist of three parameters, i.e. applied voltage magnitude, electrode distance, and treatment time. Design of experiment was made based on Box-Behnken Design in order to obtain desirable statistical properties and was analyzed using Response Surface Methodology (RSM). The analysis result of RSM show significant parameters for reducing moisture ratio of rough rice.
